Banana Muffins
Ingredients:
1/4 cup Niugini Organics coconut oil
2 cups whole wheat flour
1/2 cup coconut sugar
3/4 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 cup coconut milk
1 tsp apple cider vinegar
4 mashed ripe bananas
2 tbsp maple syrup
1 tsp vanilla extract
Directions
Preheat oven to 180C
Lightly grease muffin tins with coconut oil
Combine apple cider vinegar and coconut milk and leave for 2 minutes
Mash bananas and stir in the rest of the wet ingredients
Add dry ingredients to the mixture- Do not overmix!
Pour into the prepared muffin tins
Bake for 25 minutes
NOTE: you are welcome to cut out the maple syrup or the coconut sugar if you feel it might be too sweet because ripe bananas do tend to be very sweet
