Sweet Potato Fritters





1 tablespoon Niugini Organics coconut oil 

2 large sweet potatoes

3 fresh eggs

3 or 4 scallions or shallots

2 cloves of garlic

1/2 cup self raising flour

black pepper





Grate the sweet potato in a large bowl

Add all the other ingredients apart from the coconut oil

Mix together

In a large pan set to medium high, place the Niugini Organics coconut oil

When the pan is hot enough, drop large spoonfuls of the sweet potato mixture and cook until golden brown on each side

Remove and place on a plate lined with absorbent paper

Serve hot and enjoy!

Note: These fritters can be enjoyed with a simple salsa on the side, or you can add peas or just on their own
